Vegan inspired quesadilla!

Quesadilla is a traditional Mexican dish made with cheese and other fillings folded in a tortilla. It looks really yummy, so why not mix it up and make a healthier, vegan version?

So this recipe is my very first attempt at making vegan quesadilla, and for a first attempt it went pretty well! It was super easy and yummy and there are endless options when it comes to fillings. This is an amazing way of getting in loads to healthy food heroes, like beans, avocado, herbs and whatever other whole-food goodies you throw at it.

Here is the recipe, but please really just take this as guidance for your own personal twist :)

Step 1

Make a cut in your flatbread or tortilla going stopping at the centre (I used flatbread, but tortilla would also work)

Step 2

Add your fillings! The idea is that you treat each quarter to a different filling. In my first attempt I had:

  • Quarter 1: Vegan almond cheese spread

  • Quarter 2: Previously prepared black beans (I tend to have some kind of bean ready to eat in the fridge)

  • Quarter 3: Avocado

  • Quarter 4: More vegan almond cheese spread with sweet pepper

TIP 1: I learned pretty quickly that your fillings must not be too thick - where you can flatten them down! For example, you can mash the avocado down with a fork

TIP 2: Make quarter 1 and quarter 4 something sticky! This helps the quesadilla stick together when you fold in step 4…

Step 3

Add any other flourishes! In this case, I added chopped coriander over quarters 1 and 2, and black pepper and nutritional yeast generously over the whole thing (I just can’t get enough nooch! and I wanted cheesy!)

Step 4

Fold! Starting by folding quarter 1 over quarter 2, and continuing all the way around until it is all folded creating a hopefully neat package. At this stage, I pressed down to flatted it a little ready for frying..

Step 5

Heat a frying pan (no oil!). Add your quesadilla to the pan, and heat for a few minute on each side, keeping an eye not to burn

And that is it! So simple, totally tasty, very filling. Makes for a super fortifying breakfast or lunch.

Plus so many variations to try. Other fillings I have in mind to give a go are:

  • pureed tomato

  • chopped cherry tomatoes

  • tamari over it all

  • parsley

  • all manner of beans!

  • tofu

  • smashed potato

  • kimchi

  • mustard

  • wilted spinach

  • harissa

  • sweet corn

The list really is endless, once you have the general idea, this is one to make your own!
